Ingredients
- 2 zucchinis
- ½ red pepper, diced
- 10 ml (2 tsp.) white wine vinegar
- 15 ml (1 tbsp.) olive oil
- Salt and pepper, to taste

Directions
- Using a peeler, cut thin lengthwise slices of zucchini.
- Blend together all the ingredients.
- Serve cold.
