Ingredients

  • 2 zucchinis
  • ½ red pepper, diced
  • 10 ml (2 tsp.) white wine vinegar
  • 15 ml (1 tbsp.) olive oil
  • Salt and pepper, to taste

Equipment

  • Peeler

Directions

  1. Using a peeler, cut thin lengthwise slices of zucchini.
  2. Blend together all the ingredients.
  3. Serve cold.
