Ingredients

  • 1/2 red bell pepper
  • 1 green onions, whole
  • 1 cloves of garlic
  • 1/4 bunch of fresh parsley, with stems
  • 30 ml (2 Tbsp) olive oil
  • 15 ml (1 Tbsp) white vinegar
  • 2.5 ml (1/2 teaspoon) ground thyme
  • 45 ml (3 Tbsp) of water
  • 2.5 ml (1/2 teaspoon) salt
  • Pepper to taste

  • Measuring cup and spoons
  • Spatula
  • Electric mixer
  • Cooking plate

Directions

  • Wash, trim and coarsely chop the bell pepper, green onions, garlic and parsley (with its stems, nothing is wasted in Haiti).
  • Put all the ingredients in the container of the electric blender and reduce to a smooth purée. If necessary, scrape the sides of the container with a rubber spatula. Set aside.

Use this recipe to prepare Creole meatballs and spicy tomato sauce.
