Ingredients
Salad
- 1/8 of a cabbage (red or green)
- ¼ apple
- 1 tablespoon dried cranberries
- 2 chive scapes
- 1 stalk of flat-leaved parsley
Dressing
- ½ tablespoon apple cider vinegar
- ½ tablespoon plain Greek yogurt
- ½ tablespoon mayonnaise
- ½ teaspoon sugar
Equipment
- 1 bowl
- 1 cutting board
- 1 paring knife
- 1 tablespoon
- 1 cheese grater
- 1 scissors
Directions
- Wash the fruits, vegetables, and herbs.
- Grate the cabbage.
- Core the apple.
- Dice the apple.
- Remove the leaves from the parsley stalk.
- Use the scissors to finely cut the parsley and chives.
- Mix all the ingredients in a bowl.
- Let it rest for 30 minutes.
