Creole meatballs

Ingredients

  • 8 slices of whole wheat bread
  • 375 ml (1 ½ cup) milk
  • 1 yellow onion
  • 2 cloves of garlic
  • 125 ml (1/2 cup) of Haitian spices (see recipe here)
  • 2 lb (900 g) lean ground beef
  • 2 eggs
  • 30 ml (2 Tbsp) tomato paste
  • 1 ml (¼ tsp) salt and pepper

Directions

  1. Preheat the oven to 350 oF (180 oC).
  2. Dice the slices of bread. Put in a bowl with the milk and leave to soak for 5 minutes.
  3. Finely chop the onions and garlic.
  4. In a large bowl, with your hands or a wooden spoon, mix well the soaked bread, onions, garlic, Haitian spices, minced meat, eggs, tomato paste, salt and pepper. Reserve the remaining Haitian spices for the sauce. Form into balls with 30 g of preparation (the size of a ping pong ball). Place the balls apart on a parchment-lined baking sheet.
  5. Bake in the oven for 30 minutes or until the balls are cooked and browned. If needed, broil them for a few minutes so that the meatballs are well browned.

Serve with spicy tomato sauce and rice.

Conservation

  • Store in a tightly sealed jar or container.  Keep it in your refrigerator for up to 1 week. You can also freeze it in small portions that are easy to use.

  • Creole meatballs are a Sunday tradition, meaning that they are only eaten on Sundays, with the family, after mass. They are served with rice and beans or with white rice and red pea sauce, but always with a spicy tomato sauce.
